Cut the 3 types of ham into pieces.

Brown them in a bowl without fat.

Cover with the poultry stock and bring to a boil.

When it boils, remove from heat and let rest in a cool place for at least 12 hours.

Strain the stock.

Cut all vegetables very finely.

Pour the stock into a bowl and stir the vegetables through it.

Then stir in the egg whites.

Season to taste with salt.

Bring to a boil over high heat while stirring constantly.

Once it stops boiling, do not stir and let continue to simmer gently.

Let a crust form.

Make a hole with a spoon and during the gentle simmering process, regularly baste the crust with the stock.

Sprinkle some cayenne pepper on the crust.

Cooking time 1 to 1.5 hours.

Cooking time is finished when the crust begins to sink to the bottom.

Meanwhile, boil a kitchen towel so that all soap residues have disappeared.

Place this towel in a large sieve.

Pour the entire contents through the sieve and press well so all liquid is extracted.

Bring back to a boil and season to taste with salt and cayenne pepper.

Serve in small consommé cups.
