Peel and deseed the pumpkin, then cut into small dice (brunoise).

Finely chop the onion.

Peel the carrot and cut into small dice.

Cut the celery into thin half-moons.

Peel and deseed the red bell pepper, then cut into small dice.

Peel the potato.

Melt the butter in a large pot and sauté the onion, carrot, celery, and bell pepper together.

After 5 minutes, add the diced pumpkin and let it cook briefly.

Pour in the vegetable broth and bring to a boil.

Add the potato and simmer gently for 20 minutes until the potato is tender.

Once the potato is cooked, use an immersion blender to puree the soup until smooth.

Strain the soup through a coarse sieve and return to the pot.

Bring back to a boil and skim off any foam from the surface.

Taste and season with pepper and salt as needed.
