Divide the celeriac into stalks.

Cut the stalks into equal pieces approximately 5 cm in length.

Cut the bacon into thin strips.

Cook the celeriac for 5 minutes in salted water.

Drain and let steam dry.

Heat the olive oil in a pan and gently stew the bacon strips.

Add the celeriac and squeeze the garlic clove over it.

Deglaze with the stock and simmer covered for 40 minutes.

Remove the celeriac and bacon with a slotted spoon and place on a preheated plate.

Whisk ice-cold butter into the sauce to create an emulsion.

Season to taste with pepper and salt.

Distribute the sauce over the celeriac or serve separately.
