Wash the quinces and pat them dry thoroughly.

Quarter them and halve each quarter.

Place them in a pan and add just enough water to cover.

Bring to a boil and simmer gently for 2 to 3 hours until the fruit breaks down completely.

Line a sieve with cheesecloth.

Set the lined sieve over a large bowl.

Pour the cooked quinces into the sieve and let them drain slowly.

Squeeze out any remaining liquid from the fruit.

Measure the juice and add sugar—500 grams per litre of liquid (add more if you prefer extra sweetness).

Note that more sugar will help the jelly set faster.

Let the mixture cook down until it reaches the desired thickness.
