Pour water into a heavy-bottomed pan and add the sugar and glucose syrup.

Stir gently over low heat until all the sugar is completely dissolved before bringing to a boil.

Once boiling, stop stirring and continue cooking without agitation.

Wipe down the sides of the pan with a wet pastry brush to prevent sugar crystals from crystallizing the syrup.

Cook until the syrup turns light brown and coats the back of a spoon.

Immediately place the pan in a shallow bowl filled with ice water to stop the crystallization process.

Allow to cool before use.
