Pour half of the water into a heavy-bottomed pot and place over low heat.

Dissolve the sugar in the water, stirring gently until completely dissolved.

Once the sugar has dissolved, increase the heat to high.

Allow the syrup to cook and caramelize without stirring until it reaches your desired colour. (Caution: the hot syrup may splash and sugar particles may stick to the sides of the pot.)

To prevent the sugar from burning and hardening on the pot, use a wet pastry brush to gently brush down the sides of the pot as the syrup cooks.

Once the syrup has reached a rich caramel colour, carefully add the remaining water to stop the cooking process. (Be careful as it will bubble vigorously.)

Allow the mixture to come back to a boil without stirring, which will help it combine smoothly.

Remove from heat and allow to cool completely.

Once cooled, pour into a clean glass or plastic bottle with a tight-fitting lid for storage.

Store in a cool place or refrigerator until ready to use. Serve cold.
